The Raw Carrot Salad is something I’ve incorporated into my diet regularly for years, to support my hormone and gut health. And this variation of the salad is SO delicious and the perfect side for any main course.
But first, a deeper dive on the positive effects of the RCS:
1. Supports Gut Health and Detoxification
Raw carrots contain specific fibers that help bind to endotoxins (harmful substances produced by gut bacteria) and escort them out of the body. This can reduce the burden on the liver and support better detox overall.
2. Balances hormones, especially estrogen
Excess estrogen can cause all kinds of issues like PMS, fatigue, cramps, and even weight gain. The raw carrot fibers help clear out excess estrogen, supporting hormonal balance.
3. Antimicrobial Properties
The combination of raw carrot, vinegar, and coconut oil has a natural antimicrobial effect, helping to prevent the overgrowth of "bad" bacteria and yeast in the gut.
4. Reduces inflammation
By lowering endotoxin levels and supporting better gut health, the salad can indirectly help lower systemic inflammation.
Ingredients:
-1-2 medium raw carrots (preferably organic, but not necessary. Just scrub em’ well.)
-1/2 red onion, thinly sliced
-1-3 persian cucumbers, thinly sliced
-1 teaspoon sesame oil
-1 teaspoon rice wine vinegar
-1-2 teaspoons coconut aminos, liquid aminos, tamari, or soy sauce (if you tolerate wheat)
-1 teaspoon creamy natural peanut butter
-1 teaspoon chili sauce or sriracha
-optional: 1 green onion, chopped
Directions:
-Peel the carrots, chop the onions, cucumbers, and green onions.
-Mix all liquids into a jar and then add to veggies
-Stir to combine and store in fridge up to 4 days
