high-protein chicken & veggie skewers with tzatziki sauce
This week we’re cooking up some simple, high-protein skewers! What I love about recipes like these is they’re super customizable. Feel free to add or subtract different ingredients that you like or dislike. Short on time? You could absolutely purchase a pre-made tzatziki sauce. I just love making it myself, plus when using Greek yogurt, it’s another opportunity to add in more protein (and the ingredients are SIMPLE which we love.) Another option for this if you’re tight on time is to skip the skewers and just throw everything on a sheet pan and bake everything in the oven. Then you can serve it up in a bowl and add your sauce.
Don’t forget that recipes don’t have to be rigid. That’s the fun part about cooking. Experiment a little bit and you’ll realize how forgiving it can be!!
Ingredients:
-Chicken breast, cut into chunks
-Assorted vegetables (bell peppers, zucchini, cherry tomatoes, red onion)
-Olive oil
-Lemon juice
-Garlic cloves, minced
-Greek yogurt
-Cucumber, grated
-Fresh dill, chopped
-Salt and pepper to taste
Directions:
-In a bowl, marinate chicken chunks in olive oil, lemon juice, minced garlic, salt, and pepper.
-Thread marinated chicken chunks and assorted vegetables onto skewers.
-Grill or broil skewers until chicken is cooked through and vegetables are tender.
-Meanwhile, prepare tzatziki sauce by mixing Greek yogurt, grated cucumber, chopped fresh dill, minced garlic, lemon juice, salt, and pepper.
-Serve chicken and vegetable skewers with tzatziki sauce on the side.
