simple sheet pan dinner (high fiber!)
This is one of my absolute favorite weeknight dinners that I have on rotation. It’s so simple, satisfying, and always tastes different. This is my favorite type of recipe as it doesn’t require strict rule following, or specific ingredients. You can really change it up based on what you have on hand. Make this on a Sunday for a few simple meals to have ready for lunches and dinners.
Ingredients:
*Protein of choice (pre-cooked chicken sausage is really simple but you could also do salmon, chicken, etc.)
*Veggies of choice: sweet potatoes, carrots, zucchini, squash, broccoli, onions, asparagus, tomatoes, mushrooms.... whatever you enjoy - throw in on there.
*Fat: avocado oil, olive oil, ghee, tallow, etc.
*Seasonings of choice
Directions:
-Preheat oven to 425
-Put all the ingredients onto 1-2 baking sheets
-Coat with oil
-Add seasonings of choice
-Bake for 30-45 minutes (or until consistency of choice)
-Add a topping (optional) like: balsamic, mustard, tahini, etc!
-ENJOY!
